Boston Chicken Wrap

OH YUM - perfect for the warmer days, light, simple, delicious, and SO healthy Boston Lettuce is a staple in my house, it has replaced bread and buns for us, as I have a hard time digesting such foods, and my family has come to enjoy and even recommend it to other people (which I think is pretty cool to hear) This is a super quick meal that works for lunches or dinners and is flexible - prefer beef? Or maybe you just eat Veggie - whatever your fancy you can always make it work with a wrap and with the low calories theres no thinking twice - other than maybe you would like another one... I personally favor onions so I always try to squeeze them in there, however my daughter doesn't feel the same so sometimes we just have our basic chicken, feta and a little mustard on our boston lettuce Can't complain when the prep time is maybe 5 minutes - that kinda simplicity makes me smile

Chocolate peanut BETTER balls

So this super easy recipe came to my head oneday when I was craving cookies - specifically, a recipe my mom used to make with us - many know them as "YUM YUM cookies" or "Haybales"... however, we don't even keep sugar in the house most of the time, and this was one of those times... so life goes on, right?.. RIGHT! so grab the mixing bowl and lets see what we can finango here.... ingredients my mom used - sugar, butter, coconut, oats, cocoa So in a bowl I mixed my dry ingredients (same as moms cookies) Oats unsweetened coconut one package of chocolate shakeology chopped peanuts Than I added Honey and Natural peanut butter little by little until I got the texture I desired **NOT RUNNY** just so that everything is moist and will stick together - be sure to mix thoroughly tho scoop out with a teaspoon and roll into bite size balls place on parchment paper and top with Natural Peanut Butter (I mix a little honey with my PB) Makes 1 1/2 - 2 dozen depending on size y...

Homemade Tomato Sauce

This is one of those awsome recipes that you can tamper with and put your own spin on... which are typically my favourite kinds because they are so versatile... anything that doesn't limit me is my friend lol. First one was basic - just tomato, garlic, oregano, and extra virgin olive oil The second, there was a little more added, to use for a chili base, chicken sauce, pasta sauce, etc. Enjoy and be sure to let me know your thoughts
