Cinnamon Raisin Apples - 21 day fix approved
I couldn't WAIT to make breakfast this morning!
I anxiously waited since Friday to make this recipe... it's like "crustless pie in a cup" lol
Mmmm so yummy!
It's comforting - perfect for fall season because it is warm and warms your home with that baked apple pie smell ~ mmmm
it's versatile - we change it up! Sub in all kinds of stuff like, peaches, berries, dried fruit such as mangos, cranberries, apricots, add walnuts, spices, dried oats, and so many other things!
It's easy - I use my actifry - these things are magnificent - I love mine!
(stovetop requires stirring)
**I've yet to bake it, maybe that will be something to try in the near future and will post a crockpot recipe next week**
It's kid approved - bonus!!
It's delicious even if it isn't hot/warmed!
All you have to do is
Wash, peel and cut
8 medium apples and throw them in the actifry (or large pot/deep pan on low if doing stovetop method)
-If adding nuts now is a good time to add desired amount as well
Add
1/2 tsp coconut oil
1 tsp extra virgin olive oil
So that apples are covered
Cook in actifry for 20 mins
(stovetop method cover with lid stirring slowly every few minutes until apples are tender)
Add 1/2 cup raisins, dried fruit etc. and desired amount of cinnamon (I use about a tbsp or more)
1/4 tsp nutmeg
3/4 tbsp unsalted (natural) butter
Turn actifry on for another 5-7 minutes (stove top method continue on low stirring every few minutes until fruit is at desired tenderness)
Open lid add 1 1/2 tbsp agave syrup and turn back on for 5 minutes (stove top method simmer on low for 5 minutes)
Makes 6 servings
