21 Day fix approved chicken tacos 😀👍💪🏻




3 chicken breasts, shredded or strips

3/4 cup chopped onion

1 tsp olive oil

1 can of diced tomatoes, drained

1 packet of taco seasoning

Taco Shells (love the short list of ingredients in old elpaso !)

Mozza shredded cheese

Shredded lettuce







DIRECTIONS

Preheat oven to 375 degrees F.

Head a large frying pan over medium heat and Add in the olive oil and chopped onion. Cook until the onion is softened

Add in diced tomatoes. Cook over medium heat for 5 minutes, stirring occasionally.

Add in chicken, taco seasoning and 1/3 cup of water. Stir and simmer for 10 minutes.

In a baking dish, place taco shells standing up. (1 green container to fill two taco shells.)

Add 1/4 cup cheese for every 2 tacos

Bake at 375 for 10 minutes, or until cheese is melted and starting to brown.

Top with shredded lettuce (and tomatoes if desired)







Two Tacos is equal to one serving.







Two taco shells, 1 cup of the chicken mixture, 1/4 cup of cheese, 1/2 cup of shredded lettuce is ONE serving and equals 1 Red, 1 Yellow, 1 green and 1 blue.
