Meal Prep!!

Hi everyone I wanted to share a thought on meal prep...

I get bored of routine, I need to switch things up sometimes.

I need to have things accessible or I will go for what is, I also, hate to waste... SO...

Sometimes... What I like to do, before I do my weekly shopping list or menu planning is rummage through my kitchen for anything I haven't gotten through that week so I'm not wasting a bunch of food while making my different recipes and so on and get a little creative...

For example - This week, I had left over a little of each of these:

Carrots,✔️
Green beans, ✔️
Onion, ✔️
Cucumber, ✔️
Romaine lettuce,✔️
Dried fruit,✔️
Oatmeal,
Watermelon,✔
Cabbage, ✔️
Chickpeas,✔️
Celery, ✔️
Vanilla Greek yogurt, ✔️
Chicken broth, ✔️
Whole grain rice, ✔️
Some grapefruit and oranges, ✔️
A banana and ✔️
A couple eggs✔️
Chicken (ground and boneless/skinless)✔️
And ofcourse my Shakeology ✔️

So these were the basics for this round of my meal prep...

From that I made

- chicken veggie soup (chicken broth, carrots, onion, celery, green beans)

- scrambled eggs for breakfast

- dried fruit (snacks all week)

- mini stuffed peppers

- banana split yogurt

- celery
- cucumber water

- grapefruit juice

- can of diced tomatoes
- chicken lettuce leaf wrap

- orange juice

- shakes

- cabbage rolls

... Not bad and no waste!

What I do sometimes, is sort by meal -

so if I'm going to use 2 grapefruits to make juice, I will leave them on the counter for the morning seperated from other things

- Cabbage rolls and mini stuffed peppers I pre cooked and refrigerated, warmed when we were hungry (good for 2 days and perfect for work)

- Soup, I chopped up all my ingredients and put them in containers in the fridge and I will add desired amount in the crock pot before I leave for work in the morning and it will be nice and ready for me when I get home... Which means

🔻 dishes
🔻 work
🔻 opportunity for junk
🔻 on the grocery bill

🔺 time with fam/to myself
🔺 healthy choices
🔺 chance of success

If I have left over veggies I use them with whole grain rice, couscous or with cottage cheese (depending on what I have)

I ended up with 4 extra meals which meant, I was able to roll over into the beginning of my next week! Sweet!

At the end of the week this is what my fridge looked like 😀👍👇🏻
